Bon pour la ligne \u00e0 condition de ne pas trop l\u2019assaisonner, il remplace la viande dans les menus v\u00e9g\u00e9tariens mais pla\u00eet aussi aux r\u00e9gimes omnivores.<\/p>\n<h2>Petite histoire du tofu<\/h2>\n<p>Dans <a href=\"https:\/\/books.google.com.vn\/books?id=gGrUNvZt0_YC&amp;pg=PA2683&amp;lpg=PA2683&amp;dq=T%27ao+Ku+tofu&amp;source=bl&amp;ots=IIebKVE1C7&amp;sig=SfH6XhAcvfiKMYXVslhapQfmOiM&amp;hl=en&amp;sa=X&amp;ei=5E2HU5XaE5D9oASgzICwDw&amp;redir_esc=y#v=onepage&amp;q=T%27ao%20Ku&amp;f=false\">leur livre d\u00e9di\u00e9 \u00e0 l\u2019histoire du tofu<\/a>, William Shurtleff et Akiko Aoyag parlent de la premi\u00e8re mention de cet aliment jamais retrouv\u00e9e. Elle date de <strong>950 ap. J.-C. et vient de Chine<\/strong>. Selon les auteurs, les Chinois commencent \u00e0 produire du tofu \u00e0 cause d\u2019un manque d\u2019animaux laitiers. Pour remplacer le fromage de lait, ils fabriquent du <strong>fromage de soja<\/strong>.<\/p>\n<p>\u00c0 partir de cette date, le tofu est mentionn\u00e9 r\u00e9guli\u00e8rement dans les documents chinois. Aujourd\u2019hui, il demeure un ingr\u00e9dient asiatique dans la conscience collective, m\u00eame s\u2019il est vendu un peu partout dans le monde\u00a0!<\/p>\n<h2>La fabrication<\/h2>\n<p>Ce bloc blanc nomm\u00e9 <em>dau phu<\/em> en vietnamien, est fait \u00e0 base de <strong>graines de soja<\/strong> longtemps cuites dans de l\u2019eau port\u00e9e \u00e0 \u00e9bullition. Elles sont ensuite mix\u00e9es, s\u00e9par\u00e9es de la pulpe, puis caill\u00e9es gr\u00e2ce \u00e0 du sel coagulant. <strong>La recette est similaire \u00e0 celle du fromage<\/strong>, voil\u00e0 pourquoi on appelle souvent le tofu \u00ab\u00a0fromage de soja\u00a0\u00bb.<\/p>\n<p>Si vous souhaitez en faire chez vous, vous pouvez utiliser <strong>du nigari ou de l\u2019agar agar<\/strong>, deux g\u00e9lifiants v\u00e9g\u00e9taux. Le r\u00e9sultat est ensuite press\u00e9 pour \u00eatre d\u00e9barrass\u00e9 de l\u2019eau encore pr\u00e9sente et former des pav\u00e9s. Le mot \u00ab\u00a0tofu\u00a0\u00bb utilis\u00e9 en Occident vient du japonais qui signifie \u00ab f\u00e8ve\u00a0qui prend en masse\u00a0\u00bb, preuve que plus le bloc est compact, plus il est r\u00e9ussi.<\/p>\n<h2>Un substitut \u00e0 la viande\u00a0?<\/h2>\n<p>Que l\u2019on soit v\u00e9g\u00e9tarien ou que l\u2019on souhaite essayer une alternative \u00e0 la viande, le tofu parait adapt\u00e9 \u00e0 un nouveau r\u00e9gime alimentaire sans carence. Il est pourvu en fer, calcium, magn\u00e9sium, zinc, cuivre et vitamine A.<\/p>\n<p>Faible en mati\u00e8re grasse, il est aussi id\u00e9al pour les personnes ayant du cholest\u00e9rol ou suivant un r\u00e9gime strict. Toutefois, il doit \u00eatre accompagn\u00e9 de l\u00e9gumes et de c\u00e9r\u00e9ales pour s\u2019assurer une alimentation \u00e9quilibr\u00e9e. L\u2019une des plus r\u00e9pandues se trouve dans la majorit\u00e9 des stands de com tam\u00a0: le <strong><em>dau phu nhoi thit sot ca chua<\/em><\/strong>. Il s\u2019agit d\u2019un rectangle de tofu fourr\u00e9 \u00e0 la viande de porc, dans une sauce \u00e0 la tomate. Un d\u00e9lice\u00a0!<\/p>\n<h2>Facile \u00e0 cuisiner<\/h2>\n<p>Le tofu est <strong>neutre au go\u00fbt<\/strong>. Du coup, il peut \u00eatre facilement associ\u00e9 selon les envies. Il peut \u00eatre pr\u00e9par\u00e9, assaisonn\u00e9, cuit, ou bien mang\u00e9 cru. Oui, vous avez bien lu\u00a0: cru\u00a0! Le tofu soyeux est par exemple id\u00e9al pour faire un dessert ou une cr\u00e8me. Mixez-le avec des aliments sucr\u00e9s comme des fruits de saison ou sal\u00e9s comme des aromates, et vous obtiendrez des mets d\u00e9licieusement rafraichissants. Si vous le m\u00e9langez \u00e0 de la sauce soja, du gingembre et du cumin, vous obtiendrez une savoureuse sauce salade.<\/p>\n<h2>Lequel choisir\u00a0?<\/h2>\n<p>Le <strong>tofu soyeux<\/strong><\/p>\n<p>Aspect\u00a0: bloc lisse et g\u00e9latineux.<br \/>\nUtilisation\u00a0: plut\u00f4t dans les desserts.<br \/>\nCaract\u00e9ristique\u00a0: forte concentration en eau.<\/p>\n<p>Le <strong>tofu mou <\/strong><\/p>\n<p>Aspect\u00a0: bloc qui se brise tr\u00e8s facilement.<br \/>\nUtilisation\u00a0: cuissons au four ou \u00e0 la po\u00eale.<br \/>\nCaract\u00e9ristique\u00a0: difficile \u00e0 manipuler \u00e0 cause de sa consistance.<\/p>\n<p>Le <strong>tofu ferme<\/strong><\/p>\n<p>Aspect\u00a0: bloc rectangulaire ferme.<br \/>\nUtilisation\u00a0: correspond \u00e0 toutes sortes de cuisson.<br \/>\nCaract\u00e9ristique\u00a0: s\u2019obtient en pressant le tofu frais. Un des plus utilis\u00e9s en cuisine.
