Au cours de cette semaine durant laquelle personne ne travaille, la nourriture joue un r\u00f4le essentiel. Qu\u2019il s\u2019agisse de repas, d\u2019en-cas, ou de friandises, le passage au nouvel an lunaire ne peut pas se faire sans un minimum de sp\u00e9cialit\u00e9s culinaires \u00e0 d\u00e9guster, mais surtout, \u00e0 partager. Tour d&rsquo;horizon de la cuisine du Tet.<br \/>\n<\/strong><\/p>\n<h2><em>Banh chung<\/em> et <em>banh tet<\/em><\/h2>\n<p>Ces g\u00e2teaux de riz sont parmi les sp\u00e9cialit\u00e9s les plus populaires du Tet. Leur recette est la m\u00eame\u00a0; seule leur forme varie. Les Vietnamiens du nord pr\u00e9f\u00e8rent le <em>banh chung<\/em>, qui a une forme carr\u00e9e, tandis que les Vietnamiens du sud optent dor\u00e9navant pour le <em>banh tet<\/em>, circulaire.<\/p>\n<p>Les deux mets sont empaquet\u00e9s dans des feuilles de bananier ou de dong. Le pliage est d\u00e9licat et le d\u00e9pliage doit l\u2019\u00eatre aussi. Gare \u00e0 celui qui d\u00e9chire les feuilles en l\u2019ouvrant\u00a0! \u00c0 l\u2019int\u00e9rieur se trouve un g\u00e2teau de riz gluant qui contient en son centre une mixture faite de haricots mungo ainsi que de la viande de porc. L\u2019ensemble est cuit pendant 6 \u00e0 8h\u00a0: une pr\u00e9paration longue que beaucoup de Vietnamiens pr\u00e9f\u00e8rent \u00e9viter en achetant leurs <em>banh chung<\/em> ou <em>banh tet<\/em> tout pr\u00eats.<\/p>\n<p>L\u2019avantage de ces deux g\u00e2teaux de riz r\u00e9side dans leur dur\u00e9e de conservation. Ils peuvent \u00eatre pr\u00e9par\u00e9s \u00e0 l\u2019avance et consomm\u00e9s tout au long des c\u00e9l\u00e9brations du Tet.<\/p>\n<h2>Charcuterie vietnamienne<\/h2>\n<p>La cuisine vietnamienne regorge de charcuterie, dont l\u2019avantage est de pouvoir \u00eatre conserv\u00e9e \u00e0 temp\u00e9rature ambiante. Pour cette raison, c\u2019est l\u2019une des sp\u00e9cialit\u00e9s favorites pendant le Tet. Elle est disponible partout en ville, que ce soit dans les supermarch\u00e9s ou dans les petites \u00e9choppes de rue. Il en existe diff\u00e9rents types\u00a0: fromage de t\u00eate (gio thu), mortadelle de b\u0153uf (<em>gio bo<\/em>) ou de porc (<em>gio lua<\/em>). Elle peut \u00eatre accompagn\u00e9e de <em>banh day<\/em> (ou <em>banh giay<\/em>), un petit palet de riz gluant dont le go\u00fbt assez neutre s\u2019accorde bien avec la charcuterie vietnamienne plut\u00f4t sal\u00e9e.<\/p>\n<h2><em>Xoi gac<\/em>, le riz rouge<\/h2>\n<p>Le riz collant est un mets favori pendant la p\u00e9riode du Tet. Mais pas n\u2019importe lequel\u00a0: le riz collant rouge, une couleur porte-bonheur pour les Vietnamiens. Le riz en lui-m\u00eame est un aliment important du r\u00e9gime vietnamien. Il fait donc partie de tous les rituels religieux, se trouvant souvent plac\u00e9 sur les autels. Associ\u00e9 \u00e0 la couleur rouge qui symbolise la chance, il devient un mets important dans toute c\u00e9l\u00e9bration. Manger du <em>xoi gac<\/em> pendant la p\u00e9riode du Tet an est donc essentiel pour s\u2019attirer chance et prosp\u00e9rit\u00e9.<\/p>\n<p>C\u2019est gr\u00e2ce \u00e0 un fruit appel\u00e9 gac (<em>Momordica cochinchinensis<\/em>) que le riz prend cette coloration. La chair du fruit, d\u2019un rouge tr\u00e8s dense, est mix\u00e9e avant d\u2019\u00eatre incorpor\u00e9e au riz blanc. Apr\u00e8s assaisonnement, le riz est cuit \u00e0 la vapeur et devient collant. Un moule est parfois utilis\u00e9 pour servir le riz.<\/p>\n<h2><em>Kho<\/em>, le plat sauce caramel<\/h2>\n<p>Le <em>kho<\/em> est un plat vietnamien dont la base est une sauce au caramel. Il peut \u00eatre pr\u00e9par\u00e9 avec diff\u00e9rentes viandes mais aussi du poisson ou des crevettes. Le plus c\u00e9l\u00e8bre est sans doute <a href=\"http:\/\/nam-viet-voyage.com\/fr\/porc-au-caramel-le-vietnam-en-bouche\/\">le porc au caramel<\/a>, appel\u00e9 au Vietnam <em>thit kho tau<\/em>, et qui se d\u00e9guste plut\u00f4t dans le sud du pays. Le kho peut \u00eatre pr\u00e9par\u00e9 plusieurs jours \u00e0 l\u2019avance gr\u00e2ce \u00e0 sa sauce qui conserve les aliments et augmente les saveurs. C\u2019est pour cette raison qu\u2019il fait partie des incontournables durant le Tet. Cuisin\u00e9 avant le d\u00e9but des festivit\u00e9s, il est conserv\u00e9 jusqu\u2019\u00e0 la d\u00e9gustation plusieurs jours apr\u00e8s. R\u00e9sultat\u00a0: un plat d\u00e9licieux pr\u00eat \u00e0 savourer pendant les f\u00eates\u00a0!<\/p>\n<h2><em>Mut Tet<\/em>, des fruits confits<\/h2>\n<p>Les fruits confits constituent un incontournable des saveurs du Tet. Il faut en avoir de plusieurs sortes \u00e0 disposition, et les placer dans un joli assortiment de couleurs. Contrairement \u00e0 ce que l\u2019on pourrait penser, ils ne sont pas servis pour le dessert mais comme sucreries aux invit\u00e9s de la maison. Ils s\u2019accompagnent g\u00e9n\u00e9ralement d\u2019un th\u00e9 et inspirent la convivialit\u00e9 et le partage.
