Ce plat est \u00e9galement r\u00e9pandu au Cambodge mais aussi en Tha\u00eflande o\u00f9 son appellation varie en fonction du pays dans lequel il est cuisin\u00e9. <\/strong><\/p>\n<h2>La recette du <em>banh xeo<\/em><\/h2>\n<p>Dans le paysage culinaire vietnamien, certains plats vous rappelleront les <strong>traditionnels fran\u00e7ais<\/strong>. C\u2019est le cas du <em>banh xeo<\/em>, une <strong>app\u00e9tissante cr\u00eape<\/strong> agr\u00e9ment\u00e9e de morceaux de porc, de crevettes d\u00e9cortiqu\u00e9es et de pousses de soja. Si sa couleur jaune vive vous rappelle celle de l\u2019omelette, d\u00e9trompez-vous\u00a0: le m\u00e9lange entre <strong>la farine de riz et le curcuma<\/strong>, une plante qui poss\u00e8de des rhizomes aromatiques de couleur jaune-orange, lui donne son aspect de p\u00e2te color\u00e9e.<\/p>\n<p>Ce repas est tr\u00e8s populaire dans les trois r\u00e9gions du Vietnam que sont le Sud, le Centre et le Nord. Toutefois, des variantes entre les trois contr\u00e9es existent et vous permettront de ne jamais vous lasser de ce plat si vous parcourez l\u2019ensemble du territoire. L\u2019ad\u00e9quation entre la l\u00e9g\u00e8ret\u00e9 de sa p\u00e2te et son degr\u00e9 de croustillant, elle, est unanime pour appr\u00e9cier ce mets \u00e0 sa juste valeur.<\/p>\n<h2>Trois r\u00e9gions, trois mani\u00e8res de faire<\/h2>\n<p><strong>Le Sud<\/strong><\/p>\n<p>Au Sud, le <em>banh xeo<\/em> a la sp\u00e9cificit\u00e9 d\u2019\u00eatre <strong>plus large<\/strong> que celui du Centre ou du Nord. On distingue son go\u00fbt gr\u00e2ce au <strong>lait de coco<\/strong> dont le filtrage est le secret de sa d\u00e9licieuse saveur. Du c\u00f4t\u00e9 des ingr\u00e9dients qui changent la donne, la cr\u00eape recouvre des champignons, du lard, des haricots verts ainsi que d\u2019autres l\u00e9gumes, mais aussi des herbes de toutes sortes provenant g\u00e9n\u00e9ralement du Sud. On la trempe dans la c\u00e9l\u00e8bre sauce de poisson qui n\u2019est autre que le <em><a href=\"http:\/\/nam-viet-voyage.com\/fr\/nuoc-mam-le-vietnam-en-une-cuilleree\/\">nuoc mam<\/a><\/em>.<\/p>\n<p><strong>Le Centre<\/strong><\/p>\n<p>On admet g\u00e9n\u00e9ralement que l\u2019on doit la variante du centre \u00e0 la ville historique de <a href=\"http:\/\/nam-viet-voyage.com\/fr\/hue\/\">Hue<\/a>. Appel\u00e9e <em>banh khoai<\/em>, <em>banh canh<\/em> ou encore <em>banh khot<\/em> en fonction des r\u00e9gions du centre, la <strong>p\u00e2te de la cr\u00eape<\/strong> est toutefois plus dense. Ce <em>banh xeo<\/em> est habituellement servi ouvert, garni d\u2019\u0153ufs et beaucoup de l\u00e9gumes. Il est traditionnellement cuisin\u00e9 dans la r\u00e9gion centrale par temps froid. Sa sauce a la particularit\u00e9 de contenir des <strong>arachides grill\u00e9es<\/strong> pour rajouter un peu de croquant lorsque l\u2019on imbibe sa cr\u00eape dans la sauce de soja ferment\u00e9.<\/p>\n<p><strong>Le Nord<\/strong><\/p>\n<p>Ce qui change v\u00e9ritablement par rapport aux autres r\u00e9gions et surement l\u2019utilisation des quelque 100 mL de <strong>bi\u00e8re pour \u00ab\u00a0corser\u00a0\u00bb la saveur<\/strong> de la cr\u00eape. De plus, l\u2019absence de lait de coco d\u00e9veloppe un tout autre go\u00fbt qui en ravira surement plus d\u2019un.<\/p>\n<p>Enroul\u00e9e dans des <strong>feuilles de moutarde ou de salade<\/strong>, la cr\u00eape est servie chaude avec quelques feuilles de menthe, de basilic et est traditionnellement tremp\u00e9e dans la sauce de poisson, qui parfois, est dilu\u00e9e avec de la sauce aigre-douce.
