Fait de vermicelles de riz accompagn\u00e9s de viande de porc et d\u2019un bouillon savoureux, il trouve ses origines dans le nord du Vietnam. Toutefois, il est aujourd\u2019hui si c\u00e9l\u00e8bre que vous pourrez en trouver un peu partout dans le pays.<\/strong><\/p>\n<h2>La recette du bun cha Ha Noi<\/h2>\n<p>Le <em>bun cha<\/em> vient du nord du Vietnam, et plus particuli\u00e8rement de la capitale, <a href=\"http:\/\/nam-viet-voyage.com\/fr\/hanoi\/\" target=\"_blank\">Hanoi<\/a>. C\u2019est d\u2019ailleurs indiqu\u00e9 dans son nom\u00a0: <strong><em>Ha Noi <\/em><\/strong>correspond \u00e0 la fa\u00e7on vietnamienne d\u2019\u00e9crire Hanoi. Il se compose de vermicelles de riz, et de viande de porc. Sa particularit\u00e9\u00a0? La viande de porc est pr\u00e9sent\u00e9e de deux mani\u00e8res diff\u00e9rentes. D\u2019un c\u00f4t\u00e9, on trouve <strong>des boulettes de viande<\/strong> et de l\u2019autre, <strong>de la poitrine de porc<\/strong>. Dans le <em>bun cha<\/em>, la viande est cuite au barbecue\u00a0: c\u2019est une composante essentielle de la recette, qui lui donne sa saveur. Elle est servie dans un bol rempli de bouillon (de pr\u00e9f\u00e9rence chaud) aigre-doux et de l\u00e9gumes ferment\u00e9s tels que la carotte et le radis blanc.<\/p>\n<p>En plus des vermicelles, de la viande et du bouillon, une assiette d\u2019herbes accompagne l\u2019ensemble. Elle se compose en g\u00e9n\u00e9ral de feuilles de laitue, de p\u00e9rille de Nankin, de coriandre et de menthe. Bien entendu, de l\u2019ail et des piments sont aussi servis \u00e0 part, afin d\u2019assaisonner le plat \u00e0 la convenance de chacun. Vous pouvez \u00e9galement demander un <strong>suppl\u00e9ment de nems<\/strong> avec votre <em>bun cha<\/em>. Il s\u2019agit g\u00e9n\u00e9ralement de nems faits de crabe, de champignons et de vermicelles. Voici une petite liste de crit\u00e8res sur lesquels les adeptes de bun cha se basent pour choisir leur restaurant\u00a0:<\/p>\n<ul>\n<li><strong>La qualit\u00e9 des boulettes de porc.<\/strong> C\u2019est souvent l\u00e0 o\u00f9 le b\u00e2t blesse\u00a0: trop grasses, caoutchouteuses voire trop dures, elles alt\u00e8rent le plat. Elles doivent donc \u00eatre irr\u00e9prochables.<\/li>\n<li><strong>La quantit\u00e9 de viande.<\/strong> La viande est au c\u0153ur de la recette du <em>bun cha<\/em>. Elle doit donc se trouver en quantit\u00e9 suffisante pour remplir l\u2019estomac et satisfaire les papilles du gourmet\u00a0!<\/li>\n<li><strong>La cuisson de la viande.<\/strong> Un autre \u00e9l\u00e9ment majeur du <em>bun cha<\/em>: la cuisson au barbecue. La viande doit avoir cette touche grill\u00e9e \u00e0 laquelle les papilles s\u2019attendent, l\u00e9g\u00e8rement caram\u00e9lis\u00e9e mais pas br\u00fbl\u00e9e.<\/li>\n<li><strong>La temp\u00e9rature du bouillon.<\/strong> Un bouillon servi chaud est toujours meilleurs qu\u2019un bouillon ti\u00e8de ou froid\u00a0!<\/li>\n<\/ul>\n<h2>Comment manger un <em>bun cha<\/em>\u00a0?<\/h2>\n<p>Les ingr\u00e9dients du bun cha sont servis \u00e0 part les uns des autres. Dans le sud du Vietnam, les restaurants ajoutent un petit bol vide \u00e0 chaque client. Deux options s\u2019offrent donc \u00e0 vous lors de la d\u00e9gustation de votre <em>bun cha<\/em>.<\/p>\n<ul>\n<li>Plongez tous les ingr\u00e9dients dans le bol de viande et de bouillon, et mangez tel quel.<\/li>\n<li>Prenez un petit bol vide et placez-y un peu de nouilles, un ou deux morceaux de viande, des herbes et arrosez le tout de bouillon.
